After seeing those cute shell shaped pastries over at Anna’s blog, I simply had to test them out! Sadly, you need a special tin to get the shell shape, so I caved in and bought a tin at Ebay for a reasonable price! The tin arrived in the mail the other day, and I got to test it out, along with Anna’s recipe today!
I’m going to snag the recipe from Anna and post it here, so all credits to Anna
Madeleines
Makes 25-30
250g granulated sugar
4 eggs
250g plain flour
250g butter, melted and cooled (plus a tiny bit extra for brushing the mould)
1 tsp vanilla essence (Or the zest of a lemon or orange/orange flour water etc.)
- In a large bowl whisk together the sugar and eggs using a handheld electric whisk until pale in colour and more than doubled in volume. The mixture will go thick and the whisk will leave a trail.
- Sift in the flour and then fold in gently until just combined. (You’re trying to keep as much volume as possible.)
- Pour in the butter and the flavouring and mix until just combined.
- Rest the mixture for 10 minutes and heat the oven to 425°F/218°C/gas mark 7 while you wait.
- Brush the madeleine mould with a little leftover melted butter.
- Put a spoonful of mixture in each mould.
- Bake for 10-12 minutes until golden brown around the edges. Keep an eye on them, because they turn brown quickly!
- Turn out to cool on a wire rack.
- Brush the mould with butter and repeat the steps above until you have no more mixture.
They turned out okey! Some of them turned brown more quickly than the others, so I need to pay a closer attention to them the next time I make then!
They taste like krumkaker, only fluffier! They’re super cute, so a great recipe to whip up easily to impress at a party. Next time I will probably try to make chocolate versions of them!
